Aubergines Sweet & Sour

Ingredients for 4 people

  • 500 g of aubergines
  • 80 g of pine nuts
  • Half onion
  • 1 teaspoon of brown sugar
  • 1 teaspoon of white wine vinegar
  • Basil
  • Equilibrium Food extra virgin olive oil
  • Salt

Preparation

  • Chop the onion and cut the eggplant into small cubes. Stir the onion over a gentle flame in two tablespoons of oil;
  • Add the aubergines and cook for 10 minutes. If the cooking surface should dry out, add a little water;
  • Add the pine nuts, sugar and vinegar and caramelize for a few minutes;
  • Finally, add salt and add the basil to perfume.
